We are so thrilled to finally have our commercial kitchen approved!!! It has been a long process and full of a lot of trials and tribulations (the wonderful slow pace of island life is occasionally not a blessing), but we are up and running! Our next steps are to finalize our recipes and offerings - a not-so-arduous process involving a LOT of tasting and sampling, getting packaging squared away, and dealing with the multitude of small details and tasks to get the kiosk ready to open. Of course, this is right when I need to head back to San Francisco for a short trip, so Irmgard will be making the chocolates and I'll be trying to take care of as much as possible from afar. Our projected opening will be in late August. I'll keep everyone posted as soon as we know our official opening date!
