<image:caption>In 2016, we built a small commercial kitchen on our farm in Wainiha. The kitchen is compact, but it allows our chocolatiers all the space they need to create magic. In here, they create tropical ganaches, creamy caramels tangy with Lilikoʻi purée, and more - all waiting to be covered in rich, smooth Hawaiian chocolate.</image:caption>

<image:title>Kitchen</image:title>
<image:caption>The star of our kitchen, however, is the Wainiha Powerhouse Bar, a seed-to-bean-to-bar chocolate crafted from the over 400 trees that were planted by hand in 2015. Through countless trials, tweaks, and refinements, the Wainiha Powerhouse bars have taken on the flavors and essences of their surroundings: notes of fruit and toasted nuts mingle with the incredibly rich and mellow flavor that only Kauai-grown chocolate can produce.</image:caption>

<image:title>Process - Growing</image:title>
<image:caption>Cacao trees take years to mature. On our farm in Hanalei, they grow slowly, shaped by steady rain, rich soil, and thoughtful stewardship. We focus on long-term health rather than quick yields.</image:caption>
</image:image>
<image:image>
<image:loc>https://images.squarespace-cdn.com/content/v1/696b3246cfd80d4a21846652/9dff7791-6d38-45e2-b130-4b20bbb3b619/pollen.png</image:loc>
<image:title>Process - Pollination & Care</image:title>
<image:caption>Cacao flowers rely on tiny insects for pollination. While the trees were young, sliced banana plants helped attract these pollinators and support early growth. Care and balance continue to guide how we tend the farm.</image:caption>
</image:image>
<image:image>
<image:loc>https://images.squarespace-cdn.com/content/v1/696b3246cfd80d4a21846652/4b3df4f7-99c0-4498-9738-2f825670a4b6/farm.png</image:loc>
<image:title>Process - Harvesting</image:title>
<image:caption>Cacao pods are harvested by hand once they reach peak ripeness. This careful approach protects the trees and ensures only mature pods move forward.</image:caption>
</image:image>
<image:image>
<image:loc>https://images.squarespace-cdn.com/content/v1/696b3246cfd80d4a21846652/c0cc3d1a-e30a-4668-a9cf-f85c6070b092/CACAOO.png</image:loc>
<image:title>Process - Fermentation</image:title>
<image:caption>After harvest, the beans are fermented naturally over several days. This process is closely monitored and plays a key role in developing the chocolate’s flavor.</image:caption>
</image:image>
<image:image>
<image:loc>https://images.squarespace-cdn.com/content/v1/696b3246cfd80d4a21846652/ca8afc19-87f1-4d43-a505-e592bcd1d0c3/Fermented.png</image:loc>
<image:title>Process - Drying</image:title>
<image:caption>The beans are carefully dried to stabilize flavor and prepare them for chocolate making. Consistency during this stage is essential.</image:caption>
</image:image>
<image:image>
<image:loc>https://images.squarespace-cdn.com/content/v1/696b3246cfd80d4a21846652/81c7b570-91c0-4329-a7df-ce8fde54a5ba/chocolate.png</image:loc>
<image:title>Process - Chocolate Making</image:title>
<image:caption>Chocolate is made in small batches, with attention given to each step. Roasting and refining are kept simple, allowing the character of the cacao to shine through.</image:caption>
</image:image>
<image:image>
